Passito Cesanese Wine
This is an unsual Passito wine from a red grape with a robust character, like the Cesanese di Affile, it is created by a precise selection and accurate techniques. We allow the bunches of grapes to fade on the plant only in the best seasonal conditions, and after that we cut off the vine. We generally expect to start the yield at the end of November and then we begin the wine making. The high concentration of sugar acts as a thermal monitor, making the fermentation slower and keeping a proper sugary residue, without wasting the acidity of the wine and achieving the right balance between smoothness and acidity; giving structure, a fruity aroma and persistence.
